• Flat Apple Pie

Apple Pie is a favorite around our house and perfect for your Memorial Day Celebration. Before we get into the recipe for today I wanted to take a second to stop and remember the ultimate sacrifice that so many have made for our freedoms. Thank you! We are enjoying our long weekend and spending today baking, eating and cleaning. You know, all the fun stuff of adulting! Now let’s talk about Flat Apple Pie, have you ever tried one? Sometimes when you decide you want apple pie you either don’t have enough apples or don’t want to wait an hour for it to bake. This Flat Apple Pie will be the…

  • Mini Lemon Cheesecakes

We love cheesecake at our house! But I don’t love all of the time involved in baking and chilling! A couple years ago I discovered mini cheesecakes that are baked in a muffin tin and my life was changed for the better. There are  two great things about mini cheesecakes. First is that they are baked and ready to enjoy in a fraction of the time of traditional cheesecake. Read, you can bake and enjoy them in the same day! And second is they are portion controlled! Since these cheesecakes are healthier than most traditional cheesecake, I certainly won’t tell if you decide to eat more than one at a time. I have recently rediscovered my love of citrus…

  • Healthier Skillet Chicken Parmesan

I love meals that are quick and easy to get on the table and dirty as few pans as possible. I also love chicken parmesan, but I don’t love the calories that usually go with it. This recipe isn’t authentic Chicken Parmesan, there is no breading on the chicken, but it does have great flavor from the marinade.  For a weeknight meal I am happy to save on the extra calories. To make this recipe even easier, feel free to substitute your favorite jarred marinara sauce for the recipe I have listed below. Our local grocery has a basting oil that is delicious and is what I use for the marinade, but you could even marinade the chicken…

I found this recipe again last Saturday morning and it is just as delicious as I remembered. These Healthy Applesauce Oatmeal Muffins are simple, hearty and not overly sweet. Using old-fashioned oats in these muffins gives them a hearty texture. While the applesauce and brown sugar give them just the right amount of flavor and keeps them moist. These muffins freeze well and are perfect to pack in lunches. I’ve been enjoying them everyday this week! What’s your favorite type of muffin? Healthy Applesauce Oatmeal Muffins Ingredients: 1 cup old-fashioned oats 1 cup unsweetened applesauce 1/2 cup milk…

  • Browned Butter and Sea Salt Chocolate Chip Cookies

How did y’all celebrate National Chocolate Chip day? I made three batches of chocolate chip cookies this weekend and I made this recipe twice! On a side note, we ran out of clean spoons, that’s how much taste testing happened over here. On an even further side track, I go back to work today and I’m not jumping up and down excited about having to wake up to my alarm. But I do have cookies for the hubby and I to share with our coworkers to make our transition a little bit easier. These are currently our favorite chocolate chip variety and the hubby requests them anytime I say I’m making cookies.…

  • Saturday Coffee & Dish

Did y’all know that tomorrow is national chocolate chip day?! I think we need to celebrate by eating handfuls of chocolate chips. Here are some of my favorite recipes made with chocolate chips and I’m working on another chocolate chip cookie recipe that I’ll share with you on Monday! Old Fashioned Chocolate Chip Oatmeal Cookies This was the first recipe I posted on Sam’s Dish over 4 months ago! This is a soft and chewy cookie with just a hint of cinnamon. Chocolate Chip Cookie Cake I wasn’t a fan of cookie cakes before trying this recipe and now I can’t get enough! It’s moist and delicious with or without frosting. Ultimate Chocolate Chip Cookie Bars…

  • Sam’s on Vacation!

I had plans to prep posts for this week before we left, but it came down to packing or blogging and I chose packing. So no new posts this week while I’m enjoying a much needed vacation with my husband!

  • Saturday Coffee & Dish

Hey y’all! April was a whirlwind around here! The beginning of April my sisters came to visit over spring break and we had the best time! We don’t get to hang out just the 4 of us very often, so when we do it is special time for us. Our weekend included lots of shopping, some redecorating around my house and lots of eating! If you follow any of us on social media you probably saw some of the pictures we posted that weekend. I’ve been working on my spring cleaning list and don’t know what all I need to include! Have any tips, leave them below in the comments. Usually about the…

  • Sour Cream Coffee Cake

Growing up coffee cake was one of the breakfast foods my mom made all the time, probably because it could easily feed our large family. I remember many breakfasts sitting around the kitchen table with my family, eating coffee cake and talking. Now this isn’t the recipe I grew up eating, But this cake tastes even better the next day. Yep, you heard that right, it tastes even better the next day. So go ahead, bake it the night before and then sleep in. The sour cream keeps the cake moist and gives it a delicious flavor. I love baked goods that include sour cream! Using melted butter in the topping creates little craters in the cake, these little pockets of…

  • Simple Chicken Sausage and Broccoli Pasta

I don’t know about you, but around here meals that can be ready in less than 30 minutes are lifesavers. Life is busy and spending hours cooking a delicious and healthy meal just isn’t something I have the time or desire to do every night. With simple ingredients and a little bit of time this simple and tasty pasta dish is ready to enjoy. This pasta dish has three main ingredients; pasta, broccoli and Italian sausage. It’s then covered in Parmesan and olive oil for a light sauce. You know when you make a recipe again after a long time and it isn’t as good as you remember? That didn’t happen with this…
