• Donut Muffins

We could all act surprised that I’m posting another muffin recipe, but let’s be honest, I’m muffin obsessed! I first made these muffins shortly after I got married and they have been a favorite ever since. I wish I could say that all of the recipes I’ve tried over the years have been this much of a success. These muffins are moist and not overly sweet even with the cinnamon/sugar topping. The cinnamon and nutmeg in these muffins gives them just the right amount of flavor and reminds me of a homemade donut and that’s where they get their name, Donut Muffins. Delicious even before the topping, but dipping these muffins in the butter and…

  • Double Chocolate Brownies with Cream Cheese Frosting

There’s just something about frosted brownies when they are cold that have always had a special place in my heart. I’ve made these brownies twice over the last two weeks and both times they were consumed by very happy people. The only criticism they received was that they were too chocolatey. So if chocolate filled with chocolate and then covered in chocolate isn’t your thing, then please just leave these brownies for the rest of us. If you are one of those people, I feel sorry for you, I really do. You have to be careful when baking brownies that you don’t overbake because they will dry out. I like my brownies to be fudgey, so…

  • Vanilla Latte at Home

Vanilla Lattes are my current coffee obsession and since I’ve started making them at home I can avoid the expensive coffee shop and all of the calories that comes with it! I don’t usually share photos of all the ingredients for a recipe, so today is your special day. I bought a milk frother a couple months ago and it is amazing! I like to add the sugar and vanilla to the milk before warming it for about 30 seconds in the microwave and then use the frother to transform the milk into warm frothy goodness. The hubby bought me a Keurig for Christmas a couple years ago and I love that…

  • Cornbread

A few years ago when I got married my aunt gave me a family cookbook that included many of our favorite recipes from over the years. To say that I come from a family that loves to cook and eat delicious food, might be an understatement. While I don’t remember ever eating this cornbread at one of our family gatherings when I was younger, it was a staple at my house growing up. My mom got the recipe from her mother-in-law and my siblings and I always looked forward to meals that included cornbread. This cornbread is fluffy, moist, and slightly sweet. I’ve actually cut back on the sugar from what the original recipe called…

  • Enchilada Casserole

If you follow me on Instagram you might have seen that my sisters were in town over the weekend. I loved having them here and when we weren’t shopping we were cooking and eating! They all share my love of cooking and mexican food. This enchilada casserole is just one of the recipes we made over the weekend. It has a simple enchilada flavor that while warm, is not overly spicy. The base of this casserole is a homemade enchilada sauce that simmers while you prep the other ingredients, like browning the ground beef and shredding the cheese. Like I mentioned before the sauce is warm but not spicy, so if you like a little bit of…

  • Individual Meatloafs

After I graduated from college I got an apartment with a couple friends and I quickly discovered that I only knew how to cook for a crowd! One of my married friends who lived in the area definitely looked out for me during my first couple of years on my own. Tiffani was a couple of years older than I was and she let me come over for dinner often and always sent me home with leftovers. She gave me this recipe she cut out of a magazine that had a cooking for one section and I’ve now adapted it to feed four. Growing up I was pretty neutral to meatloaf. I would eat it when my mom served it, but…

  • Refrigerator Bran Muffins

I think it’s safe to say that I have a slight muffin obsession. But honestly, can you have too many go to muffin recipes? I think not. Last year I went looking for a bran muffin recipe and once I discovered the inspiration for these I stopped looking. Not only are they delicious and healthier (applesauce replaces some of the butter), but the batter can be stored in the refrigerator for up to 14 days. Yep, you read that right. Once you make the batter you can let it sit in the refrigerator for up to 2 weeks and when you are ready to bake them  just give the batter a good stir before spooning into…

  • Saturday Coffee & Dish

Happy Saturday! March was an extremely busy month at our house and I’m looking forward to purposefully slowing things down in April. My sisters are on spring break this week and are coming to visit! There will be lots of shopping, cooking, eating and girl talk and I can’t wait! Do you use the Target Cartwheel app? I love shopping at Target and I love getting a good deal. With the Cartwheel app I can scan each item as I put it in my cart to see if I can get an additional discount. I got a package from one of my sisters recently and it included this adorable bunny cookie cutter set! I’m thinking some spring sugar…

  • Easy Parmesan Alfredo Sauce

Life is busy and you don’t need me to tell you that. This recipe has been a life saver when I need to get dinner on the table in 30 minutes or less and we want something other than grilled cheese or french toast. Now don’t get me wrong, I’m all for a grilled cheese sandwich and I did an entire post on french toast a couple weeks ago. But some nights you want something that is just as quick and easy, but a little bit fancier. Let me introduce you to this Easy Parmesan Alfredo Sauce that is both easy and fancy. With only four ingredients, plus salt and pepper, this…

  • Cinnamon Toast

Here’s another recipe where you are probably thinking to yourself that you don’t need a recipe for toast. But if you usually toast your bread and then spread butter on it and sprinkle a cinnamon/sugar mix on top you probably enjoy it. But if you want to take it from enjoy to love then you need to make this recipe. The secret is in spreading the butter and cinnamon/sugar mixture on the bread before toasting which creates a delicious caramelized topping. Now the recipe calls for 6 slices of bread, but this is going to depend on the size of the slices. Any sliced loaf bread, white or whole wheat will…
