    We could all act surprised that I’m posting another muffin recipe, but let’s be honest, I’m muffin obsessed! I first made these muffins shortly after I got married and they have been a favorite ever since. I wish I could say that all of the recipes I’ve tried over the years have been this much of a success.     There’s just something about frosted brownies when they are cold that have always had a special place in my heart. I’ve made these brownies twice over the last two weeks and both times they were consumed by very happy people. The only criticism they received was that they were too chocolatey. So if chocolate filled with chocolate and then covered in chocolate isn’t your thing, then please just leave these brownies for the rest of us.     Vanilla Lattes are my current coffee obsession and since I’ve started making them at home I can avoid the expensive coffee shop and all of the calories that comes with it! I don’t usually share photos of all the ingredients for a recipe, so today is your special day. To say that I come from a family that loves to cook and eat delicious food, might be an understatement.     If you follow me on Instagram you might have seen that my sisters were in town over the weekend. I loved having them here and when we weren’t shopping we were cooking and eating! They all share my love of cooking and mexican food. This enchilada casserole is just one of the recipes we made over the weekend.
