• Double Chocolate Cake

So last weekend I celebrated my birthday and like most food bloggers, I made my own Double Chocolate Cake. Now don’t go hating on my hubby for making me make my own birthday cake, he offered to make one for me. He actually has made me a birthday cake in the past, but this year I was dreaming of this amazing Double Chocolate Cake that I’m sharing with you today. This recipe makes a lot of cake. Unless your cake pans have unconventionally high sides, I recommend splitting the batter into three pans. Since I only have two 9-inch cake pans, I bake two layers and then wash one of the pans and bake…

  • Strawberry Lemonade

The Monday after a weekend of birthday celebrations calls for a recipe that is surprisingly healthy and deliciously refreshing. Yesterday I celebrated my 29th birthday and my hubby spoiled me this weekend with flowers, coffee and a shopping trip on Saturday and then lunch out on Sunday. He really is the best. I also baked and enjoyed a delicious chocolate cake, because when you are a food blogger you bake your own birthday cake. I’ll share recipes and pictures later! Ok, on to the recipe for today. I have always liked strawberries, but this summer I just can’t get enough of them! Do recipes that only have 4 four ingredients actually count as…

  • Saturday Coffee & Dish – June 2016

How is it June already?! Instead of saying that May was really busy (I’m learning that life is just really busy) I’m just going to say that May was another typical month at our house. We started out May with a 1 and 1/2 week trip to California that began with us driving up highway 1 from LA to SF in a convertible! I’m working on a blog post and a photo book about all of the fun things we did and all of the yummy things we ate. I’ll leave you with a picture of this sandwich we got while in SF. It’s a grilled cheese sandwich with macaroni and cheese…

  • Flat Apple Pie

Apple Pie is a favorite around our house and perfect for your Memorial Day Celebration. Before we get into the recipe for today I wanted to take a second to stop and remember the ultimate sacrifice that so many have made for our freedoms. Thank you! We are enjoying our long weekend and spending today baking, eating and cleaning. You know, all the fun stuff of adulting! Now let’s talk about Flat Apple Pie, have you ever tried one? Sometimes when you decide you want apple pie you either don’t have enough apples or don’t want to wait an hour for it to bake. This Flat Apple Pie will be the…

  • Mini Lemon Cheesecakes

We love cheesecake at our house! But I don’t love all of the time involved in baking and chilling! A couple years ago I discovered mini cheesecakes that are baked in a muffin tin and my life was changed for the better. There are  two great things about mini cheesecakes. First is that they are baked and ready to enjoy in a fraction of the time of traditional cheesecake. Read, you can bake and enjoy them in the same day! And second is they are portion controlled! Since these cheesecakes are healthier than most traditional cheesecake, I certainly won’t tell if you decide to eat more than one at a time. I have recently rediscovered my love of citrus…

  • Healthier Skillet Chicken Parmesan

I love meals that are quick and easy to get on the table and dirty as few pans as possible. I also love chicken parmesan, but I don’t love the calories that usually go with it. This recipe isn’t authentic Chicken Parmesan, there is no breading on the chicken, but it does have great flavor from the marinade.  For a weeknight meal I am happy to save on the extra calories. To make this recipe even easier, feel free to substitute your favorite jarred marinara sauce for the recipe I have listed below. Our local grocery has a basting oil that is delicious and is what I use for the marinade, but you could even marinade the chicken…

  • Healthy Applesauce Oatmeal Muffins

Do you ever come across recipes that you had  completely forgotten about? That’s what happened with this one. I found this recipe again last Saturday morning and it is just as delicious as I remembered. These Healthy Applesauce Oatmeal Muffins are simple, hearty and not overly sweet. Using old-fashioned oats in these muffins gives them a hearty texture. While the applesauce and brown sugar give them just the right amount of flavor and keeps them moist. These muffins freeze well and are perfect to pack in lunches. I’ve been enjoying them everyday this week! What’s your favorite type of muffin? Healthy Applesauce Oatmeal Muffins Ingredients: 1 cup old-fashioned oats 1 cup unsweetened applesauce 1/2 cup milk…

  • Browned Butter and Sea Salt Chocolate Chip Cookies

How did y’all celebrate National Chocolate Chip day? I made three batches of chocolate chip cookies this weekend and I made this recipe twice! On a side note, we ran out of clean spoons, that’s how much taste testing happened over here. On an even further side track, I go back to work today and I’m not jumping up and down excited about having to wake up to my alarm. But I do have cookies for the hubby and I to share with our coworkers to make our transition a little bit easier. These are currently our favorite chocolate chip variety and the hubby requests them anytime I say I’m making cookies.…
