Fall officially starts this week!! Are you ready? I pulled out my fall decorations on Saturday and I’m loving how festive our house is looking. Now that it looks like fall in here it’s time for fall food. Let’s be honest here, I’ve been eating these Pumpkin Muffins for weeks and think they are the perfect way to celebrate the changing of seasons. Back when I was in college I had a friend who sent me regular care packages and she often included these muffins. Care packages with homemade baked goods were always a bright spot for a college student living away from home! After I graduated she shared the recipe with…

Strawberry Chocolate Chip Muffins
I’m back today after an unexpected two week blogging hiatus. Hopefully I can get back to regular blogging this week. Before we get to today’s recipe can we take a second and talk about how today is August 1st? Where did the summer go?! At the beginning of the summer I started working on a strawberry muffin recipe. I wanted them to be moist and fluffy with a fresh strawberry flavor. So here we are today, pounds of strawberries and dozens of muffins later, we have Strawberry Chocolate Chip Muffins. For the bright and fresh strawberry flavor, we use fresh strawberry puree and it gives them a pretty pink color too!…

Healthy Applesauce Oatmeal Muffins
Do you ever come across recipes that you had completely forgotten about? That’s what happened with this one. I found this recipe again last Saturday morning and it is just as delicious as I remembered. These Healthy Applesauce Oatmeal Muffins are simple, hearty and not overly sweet. Using old-fashioned oats in these muffins gives them a hearty texture. While the applesauce and brown sugar give them just the right amount of flavor and keeps them moist. These muffins freeze well and are perfect to pack in lunches. I’ve been enjoying them everyday this week! What’s your favorite type of muffin? Healthy Applesauce Oatmeal Muffins Ingredients: 1 cup old-fashioned oats 1 cup unsweetened applesauce 1/2 cup milk…

Donut Muffins
We could all act surprised that I’m posting another muffin recipe, but let’s be honest, I’m muffin obsessed! I first made these muffins shortly after I got married and they have been a favorite ever since. I wish I could say that all of the recipes I’ve tried over the years have been this much of a success. These muffins are moist and not overly sweet even with the cinnamon/sugar topping. The cinnamon and nutmeg in these muffins gives them just the right amount of flavor and reminds me of a homemade donut and that’s where they get their name, Donut Muffins. Delicious even before the topping, but dipping these muffins in the butter and…

Refrigerator Bran Muffins
I think it’s safe to say that I have a slight muffin obsession. But honestly, can you have too many go to muffin recipes? I think not. Last year I went looking for a bran muffin recipe and once I discovered the inspiration for these I stopped looking. Not only are they delicious and healthier (applesauce replaces some of the butter), but the batter can be stored in the refrigerator for up to 14 days. Yep, you read that right. Once you make the batter you can let it sit in the refrigerator for up to 2 weeks and when you are ready to bake them just give the batter a good stir before spooning into…

Healthy Banana Oatmeal Muffins
We bake and consume a lot of muffins at our house and these healthy and delicious ones are a favorite. I hope you have over-ripe bananas in your kitchen, because you need to make these right now. Oatmeal replaces some of the flour in these muffins and gives them a great texture. The banana and sour cream keeps them moist and gives them extra flavor. While I’m sure they would still be delicious if you baked them without adding the mix-ins, I can’t say for sure because I always add the mix-ins! There are several reasons why you need these muffins in your life… Healthy, yes! Moist, yes! Customizable, Yes! Uses fruit that you…

Double Dark Chocolate Muffins
When I think of Valentine’s Day I think of chocolate. Let’s be honest here, I think about chocolate every day, not just on Valentine’s Day. Anyways, these muffins would make a great addition to your Valentine’s Day breakfast or brunch any weekend. I use dark cocoa powder in these muffins, but you could definitely use regular cocoa powder. I talk about my love of dark cocoa powder over in this post. Because of the dark chocolate color it gives them, you’ll never know that there is whole wheat flour hiding out in there. That makes them healthy, right? These muffins are best when they are warm and the chocolate chips are melted. I love to stock my…
