Healthy Applesauce Oatmeal Muffins

Do you ever come across recipes that you had  completely forgotten about? That’s what happened with this one. I found this recipe again last Saturday morning and it is just as delicious as I remembered. These Healthy Applesauce Oatmeal Muffins are simple, hearty and not overly sweet.

Using old-fashioned oats in these muffins gives them a hearty texture. While the applesauce and brown sugar give them just the right amount of flavor and keeps them moist.

Healthy Applesauce Oatmeal Muffins

Ingredients:

1 cup old-fashioned oats
1 cup unsweetened applesauce
1/2 cup milk
1 large egg
1 teaspoon vanilla
4 tablespoons butter, melted
1/3 cup brown sugar
3/4 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt

Directions:
  1. Preheat the oven to 375 degrees.
  2. Line a 12-cup muffin tin with liners and do a quick spray with cooking spray to keep the muffins from sticking.
  3. In a medium bowl, whisk together the oatmeal, applesauce, milk, egg, vanilla, butter and brown sugar.
  4. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt.
  5. Make a well in the center of the flour and pour in the applesauce mixture, stirring until just combined (be careful not to overmix). The batter texture will be wetter than other muffin batters.
  6. Distribute the batter evenly among the 12 muffin cups (these muffins don’t rise very much, so go ahead and fill up the muffin cups). Bake for 15-20 minutes, until a toothpick inserted in the center comes out clean. Be careful not to over bake or the muffins will be dry.
