• Pumpkin Muffins

Fall officially starts this week!! Are you ready? I pulled out my fall decorations on Saturday and I’m loving how festive our house is looking. Now that it looks like fall in here it’s time for fall food. Let’s be honest here, I’ve been eating these Pumpkin Muffins for weeks and think they are the perfect way to celebrate the changing of seasons. Back when I was in college I had a friend who sent me regular care packages and she often included these muffins. Care packages with homemade baked goods were always a bright spot for a college student living away from home! After I graduated she shared the recipe with…

  • Chicken Burrito Bowls

Simple ingredients come together to make a delicious and healthy meal. These Chicken Burrito Bowls are a favorite at our house and the hubby is always excited when he sees them on the menu. I love the flavor that the grilled chicken gives these bowls, but it is easy to customize them for your taste. Try swapping steak or shrimp for the chicken. Or leave the meat out entirely for a vegetarian option. Shh…don’t tell my hubby I just suggested a vegetarian option. Any of your traditional or non-traditional burrito toppings would work here. Maybe try some black olives, bacon, shredded lettuce, salsa, diced onions or even warm melty queso. This…

  • Oatmeal Cake with Caramel Icing

So I know it’s not quite fall yet, thanks to my hubby for reminding me this week that we still have a couple weeks of summer left. But since I want you to be fully prepared for fall and all of the delicious food that comes with it, today I’m sharing a cake that just screams fall. This Oatmeal Cake is another recipe from my hubby’s mom. Now don’t let its plain name fool you. This cake is full of flavor and is incredibly moist. I don’t know if mentioning moist just once is convincing enough. This Oatmeal Cake is what a moist cake dreams of being.  The recipe starts off…

  • Saturday Coffee & Dish – September 2016

Hey Y’all! Hope you are enjoying a few last tastes of summer this Labor Day weekend. We are spending the weekend in Delaware and had planned to spend large amounts of time on the sunny beach, but hurricane Hermine changed those plans. So we are enjoying a weekend away from home, watching football, drinking coffee and watching the rain fall. A little hurricane won’t keep us from having a relaxing weekend!! If you’ve been a reader for a while you might notice that the address changed and I’m now officially samsdish.com! And if that wasn’t cool enough, the site also got a makeover! Bear with me for the next few…

  • Oatmeal Raisin Cookies

I have a confession to make…I like raisins and I love Oatmeal Raisin cookies! I feel like you either love raisins or you hate them and my husband, who is the main taste-tester around our house, doesn’t like them. I guess that’s just more proof that opposites attract. I’ve been craving Oatmeal Raisin Cookies for months and the raisins that have been sitting in my pantry have been mocking me. I finally had the chance to make some over the weekend and I’m kicking myself for waiting so long. The recipe for these cookies is based off of an Oatmeal Cookies recipe from my husband’s mom. I changed up a few of the…

  • Mini Chicken Meatballs in Tomato Cream Sauce

Is it true that everything tastes better when it’s mini? Yes? Maybe? The mini chicken meatballs really are the star of this pasta dish. I know it might be shocking, but this recipe was my first time cooking with ground chicken and I think I loved it. While not exactly a one pot meal, since you cook the pasta in a separate pot, this recipe definitely falls into the one pot meal category for me. Not only does it dirty minimal dishes, it also goes from start to finish in less than an hour, both of which are requirements for my busy lifestyle. Let’s talk about the meatballs for a…

  • Cherry Limeade Punch

I am a firm believer that everyone needs a signature punch recipe. This Cherry Limeade punch has been a favorite of mine for years. When I’m throwing a party I always need a couple of “easy” recipes on the menu. Recipes that I’ve made multiple times and don’t have fussy ingredients. This punch is perfect for bridal showers, baby showers, birthday parties, anniversary parties, summertime cookouts…I think you’re getting the idea here. This punch is perfect for parties or just an ordinary day that needs a little something extra special. Do you remember the Cherry Limeades at Sonic? I lived off of them in my early twenties and this punch definitely…

  • Double Chocolate Donuts

I can’t believe it’s taken so long for me to share this recipe! These double chocolate donuts are delightfully delectable and a cross between the Baked Cinnamon Sugar Donuts and the Double Dark Chocolate Muffins that we already know and love. Chocolate donuts are hands down my favorite type of donut. And these chocolate donuts are tender and cakey and covered in a dreamy chocolate ganache. I call these donuts double chocolate for 2 reasons. First they are chocolate donuts covered in a chocolate ganache and secondly, they are double dipped in the ganache. Yes, you read that right, double dipped. Because one layer of ganache just isn’t enough. This ganache is everything…

  • Saturday Coffee & Dish – August 2016

There’s so much to talk about in July! Here are some of the highlights. We spent the 4th of July week with my family in Georgia and had a great time. We spent lots of time hanging out at my parent’s house, eating and playing Dutch Blitz. Have you played it before? It’s definitely a favorite of ours. I only posted one picture, but I think there’s a similar one from each day we were down there.   One morning we made donuts and I think they loved them! Not that I was really worried, who doesn’t love donuts?! We also celebrated my youngest sister’s 16th birthday with lunch and shopping…

  • Strawberry Chocolate Chip Muffins

I’m back today after an unexpected two week blogging hiatus. Hopefully I can get back to regular blogging this week. Before we get to today’s recipe can we take a second and talk about how today is August 1st? Where did the summer go?! At the beginning of the summer I started working on a strawberry muffin recipe. I wanted them to be moist and fluffy with a fresh strawberry flavor. So here we are today, pounds of strawberries and dozens of muffins later, we have Strawberry Chocolate Chip Muffins. For the bright and fresh strawberry flavor, we use fresh strawberry puree and it gives them a pretty pink color too!…
